Hi! I’m back to share a delicious recipe with you guys. I love trying new recipes, and love it even more when you can add your own twist on a recipe and it still turns out delicious. The original idea for this recipe came from Pinterest. (Where else would it come from??) If you haven’t tried stuffed peppers, you are missing out! So here’s your chance….make this recipe (or some variation of it) ASAP! You won’t regret it! 🙂
Here are the ingredients that I used:
**1/2 lb lean ground meat (turkey, beef, elk)
**1 cup diced onions
**1 bag of brown rice (Uncle Ben’s 90 second works well)
**1 tbsp taco seasoning
**Spray can of olive oil
**4 bell peppers, cut in half, seeds removed
**1 can of black beans, drained and rinsed
**1/2 cup corn (frozen or canned
**1 (15-16 ounce) jar of salsa
**2% Shredded Mexican Cheese
Before you get started, pre-heat the oven to 400 degrees. Next, chop the onion into small pieces. Cut each bell pepper in half and remove the seeds. Try to leave as much of the stem as possible so that it can hold the meat mixture. Place peppers on a cookie sheet and spray a small amount of olive oil on each pepper. Cook peppers for 20 minutes.
While your peppers are in the oven, cook your meat of choice (we used elk burger, since hunting season just ended 🙂 and add onions until they are sautéed.
In a large bowl, add cooked brown rice, taco seasoning, black beans, corn, salsa, meat and onions. Mix well. Remove peppers from oven. Fill each pepper half with the delicious meat mixture. When all of the peppers are stuffed, place them back in the oven for another 15 minutes. Add a sprinkle of cheese to each pepper right before you take them out of the oven.
Feel free to add your favorite toppings to the peppers such as avocado, sour cream and/or chives. I topped mine with plain Greek yogurt.
These peppers are delicious and healthy! They are a great way to sneak in a serving of veggies 🙂
